The Winemaker


Peter Taylor brings the experience of thirty vintages to Hare’s Chase. It all began in the Barossa Valley in 1976 with his first crush as a cellarhand/student at Chateau Tanunda. After graduation from Roseworthy Agricultural College in 1977, he embarked on a career which has encompassed all facets of winemaking. The different disciplines of dry reds, dry whites, sparkling and fortifieds provided a sound basis for his future pursuits at Hare’s Chase.

For the last 18 years Peter has been particularly involved in the making of premium Australian red wines. From 1987 until 1991 he held the position of winemaker for Seaview in the McLaren Vale region of South Australia, where he was responsible for many award winning Shiraz and Cabernet wines. His talent in this area did not go unrecognised and in 1992 he began his role as the Senior Red Winemaker for Penfolds in the Barossa Valley.

It was during this period that Peter became familiar with all of the premium sub-regions of the Barossa Valley, including those vineyards that produced the famous Penfolds Grange. Through his intimate knowledge of the region, he was able to select the ideal vineyard at Marananga to produce the premium grapes for Hare’s Chase wines.

In 1997 he was promoted to the position of Group Red Winemaker for Southcorp Wines where he was responsible for all of their Australian red wines. 2003 saw his transition to Chief Winemaker.

Peter has always had enormous admiration for the Shiraz wines of Côte-Rôtie in the Hermitage region of France. His aim at Hare's Chase is to produce wines of this style, but with the distinctive Barossa Shiraz imprint.
